Aging: The base wine, often a blend of traditional Champagne grape varieties such as Airen, Ugni Blanc, Durello and Chardonnay, undergoes primary fermentation in stainless steel tanks to preserve the fruit's freshness and purity.
The second fermentation, following the méthode traditionnelle, takes place in the bottle , where a mixture of sugar and yeast is added to create the bubbles. The wine then matures on its lees for an extended period, developing complexity, depth, and a creamy texture. After aging, the bottles are riddled to consolidate the lees, disgorged to remove the sediment, and a dosage is added to adjust the sweetness level.
